Ham and Egg Breakfast Sandwich

    A hearty breakfast sandwich that is ready in 5, with eggs, ham, onion, capsicum and cheese. This sandwich is ready in the time it takes to toast a muffin.

    • 1 English muffin, split, toasted and buttered
    • 1 egg
    • 2 slices deli ham
    • 1 slice onion
    • 1 slice capsicum
    • small knob butter
    • 1 slice cheese

    1. Lightly grease a large frying pan with cooking spray. Heat over medium high.
    2. While muffin is toasting, crack egg in one corner of the frying pan. Place ham in another. In another corner, saute the onion and capsicum in the small knob of butter.
    3. When egg white is cooked but yolk still runny, place on the toasted muffin, top with ham, onion, capsicum and cheese. Top with other half of muffin and enjoy.
