Mexican Chilli Corn

    Mexican street vendors sell corn that is dipped in mayonnaise then sprinkled with chilli powder and Cotija cheese. Using frozen corn and feta, you can bring that flavour right to your own table.

    Ingredients
    Serves: 4 

    • 500g frozen corn
    • 1/4 cup mayonnaise
    • 1/4 cup feta, crumbled
    • chilli powder, to taste

    1. In a saucepan, cover corn with salted water and bring to a boil. Boil for about 5 minutes then drain well.
    2. Stir in the mayonnaise, feta and chilli powder until well combined. Serve with your next Mexican inspired meal.
