This delicious salad couldn't be simpler! I use it as an accompaniment to barbecued meats, kebabs or fish.

Ingredients
Serves: 6 

  • 5 tomatoes
  • 4 green capsicums
  • 1 large red onion
  • 1 bottle Italian salad dressing

Directions

  1. Slice tomatoes and capsicums and set aside. Slice the red onion and separate the rings.
  2. Using a large bowl with a lid, layer the tomatoes, capsicums and onion until all vegetables are used. Shake the bottled dressing and pour desired amount over the vegetables. Refrigerate for 2 to 3 hours or, for best results, overnight.
  3. Before serving, shake bowl to ensure all vegetables are coated with the dressing.

Very delicous, it was simple, yet elegant. Although there was a little overload on the capsicums, and too little tomatoes. This recipe isnt really anything special though. - 29 Sep 2008
