Quiche makes a quick and easy midweek meal, using prepared shortcrust pastry and really whatever you have laying around in your fridge. This one has cheese, broccoli and ham.

Serves: 4 

  • 1 sheet shortcrust pastry
  • 6 eggs
  • 1/4 cup milk
  • 1 medium onion, grated
  • 1 cup tasty cheese, grated
  • 1 cup frozen broccoli, finely diced
  • 1/2 cup finely diced ham
  • salt and pepper, to taste

  1. Preheat oven to 200 degrees C. Grease a pie dish then lay in the shortcrust pastry. Prick with a fork then place in the oven for about 10 minutes, until the base begins to brown slightly.
  2. In a bowl beat the eggs well with the milk. Stir in the onion, cheese, broccoli, ham, salt and pepper. Pour into the pie base.
  3. Bake in preheated oven until the quiche springs back when poked in the centre, about 25 minutes.
