    This amazing breakie is so simple and so delicious. Hollow out a tomato, add some parmesan cheese, an egg and a sprinkling of chives. Delicious and healthy too.

    Ingredients
    Serves: 2 

    • 2 tomatoes
    • 1/2 cup grated Parmesan cheese
    • 2 eggs
    • 1 English muffin, toasted and buttered
    • chives, to garnish

    Directions
    Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Preheat oven to 180 degrees C. Cut the top of the tomato then scoop out the insides, leaving a thick but hollow shell. Dry out the centre with a paper towel.
    2. Place 1/4 of the Parmesan cheese in the bottom of each tomato. Crack an egg into each tomato. Place in a baking dish then bake in preheated oven for about 30 minutes.
    3. Remove from oven and sprinkle with remaining cheese, top with a sprinkle of chive then serve each on an English muffin half.
