Bacon & Kumara Muffins

    Serves: 4 

    • 1 med onion finely chopped
    • 2 or 3 rashers bacon finely chopped
    • 2 tablespoons cooking oil (I use canola)
    • 1 teaspoon curry powder
    • 2 eggs whisked together
    • 1 cup mashed kumara or sweet potato
    • 2 cups self raising flour
    • 1 cup grated cheese or substitute with 1/2 blue cheese 1/2 grated cheese
    • 1 cup milk

    1. Cook bacon and onion and curry powder in the oil and cool.
    2. Mix together eggs, cheese, milk, kumara till smooth and add bacon and onion mixture.
    3. Fold in the flour, don't over mix.
    4. Prepare a muffin tin with spray and spoon mixture into this, filling to the top.
    5. Bake in 220 C oven for 15 minutes or till skewer comes out clean.
    6. Cool in tin for several minutes and remove to wire rack.


    I cook the sweet potatoes in the microwave cool and take off the skins. These muffins will keep well for a couple of days or you can freeze them. Serving them warm brings out the curry flavour. You can add coriander or parsley to the mix if you like for variation.
