Nana's Buttery Shortbread

    This recipe has been in my family for ever. I remember that Nan would let me eat all the mis-shapen corner pieces, but the good bits got boxed up for Christmas.

    Makes: 50 finger sized biscuits

    • pinch of salt
    • 440g flour
    • 190g cornflour
    • 190g icing sugar
    • 500g butter, soft

    Preparation:20min  ›  Cook:30min  ›  Ready in:50min 

    1. Preheat oven to 180 degrees C. Line a baking tray with baking paper.
    2. Combine dry ingredients in a bowl then rub in the soft butter.
    3. Roll out about 1/2cm -1cm thick then slice into strips or cut with biscuit cutters. Place on prepared baking tray.
    4. Bake in preheated oven for 15-20 minutes.
