Corned Beef Hash with Capsicum

    This tasty corned beef hash is the best, by far. Chock a block full of capsicum, onion, corned beef and potatoes. You can use leftover corned beef or the tinned stuff.

    Serves: 2 

    • 2 large potatoes, grated
    • 170g corned beef, diced
    • 1/2 green capsicum, cut in matchsticks
    • 1/4 red capsicum, cut in matchsticks
    • 1 small onion, thinly sliced
    • 1 clove garlic, crushed
    • 1 egg
    • 1/4 cup oil, for frying

    1. Place the grated potatoes in colander and rinse well until the water runs clean. Drain then squeeze out any excess water.
    2. In a bowl combine potatoes, capsicums, onion, garlic, corned beef and egg.
    3. Heat oil in a large frying pan (I prefer to use a large electric frypan) then add the hash. Cook until golden brown and crispy on both sides, turning occasionally.
