    A delicious appetizer before a main meal.

    Serves: 4 

    • 2 lb (900g) green zuchini, sliced thinly
    • 2 cloves garlic, chopped
    • 4 tbsp. butter
    • 1/2 tsp salt
    • 4 tbsp. finely chopped shallots
    • 1 cup heavy cream
    • 2 to 3 cups chicken broth - your preference
    • 1/2 tsp. curry powder
    • amount depends on how thick you like your soup

    Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Clean zucchini - do not peel.
    2. Slice thinly.
    3. In a heavy skillet, heat butter and then add zuccini, shallots and garlic.
    4. Cover tightly and simmer 15 minutes, being careful not to let it brown.
    5. Spoon veggies mixture into blender - then add remaining ingredients and blend until smooth.
    6. Serve hot or cold.


    I serve this to my dinner guests as an appetizer.
