    This is a beautiful and colourful salad that uses fresh vegetables and a spicy Dijon mustard vinaigrette.

    Ingredients
    Serves: 7 

    • 1 cucumber, sliced
    • 1 green capsicum, sliced
    • 1 red onion, sliced
    • 4 large tomatoes, cut into wedges
    • 4 tablespoons olive oil
    • 2 tablespoons white wine vinegar
    • 2 tablespoons Dijon mustard
    • 2 tablespoons mustard seeds
    • 1 teaspoon mustard powder
    • 1/2 teaspoon hot sauce, such as Tabasco (optional)

    Directions

    1. In a salad bowl, combine the cucumber, capsicum, red onion and tomatoes.
    2. Whisk together the remaining ingredients. Pour the vinaigrette over salad and toss to coat. Season with salt and pepper to taste.

    hmmmm . . . tomatoes and mustard . . . 2 of my least favorite things, yet 2 of my husband's faves. But they say a way to a man's heart is through his stomach and I am jonesing for a new digital camera that costs $900 so I made the salad. And to my surprise it is quite good. We had nicely ripened yet firm tomatoes and this made huge amount of salad. My dh hasn't tried it yet, but I know he will love, love, love it. You think the mustard is going to be to much, but it isn't. It makes a great summer salad!     This was a wonderful addition to my Easter meal. The trio of mustards complemented the ham beautifully. Much to my husband's dismay, there were no leftovers, so I'll have to make this dish again very soon.
