Spicy Banana Loaf

    A healthy and delicious banana bread - the perfect way to use up those old, brown bananas!

    Makes: 1 loaf

    • 1 1/2 cups wholemeal self-raising flour
    • 1 teaspoon mixed spice
    • 1 tablespoon wheat germ
    • 1/2 cup raw sugar
    • 125g butter, softened
    • 2 eggs, lightly beaten
    • ⅓ cup vanilla yoghurt
    • 3 ripe bananas, mashed

    1. Preheat oven to 200 degrees C. Grease a large loaf tin.
    2. Place flour, spice, wheat germ, sugar and butter in a large bowl. Rub butter through with fingertips until the mixture resembles fine breadcrumbs.
    3. Add eggs, yoghurt and banana and stir until the mixture is just combined. Do not over mix.
    4. Spoon mixture into prepared loaf tin and smooth surface. Bake for 1 hour or until a skewer comes out clean when inserted. Leave loaf in tin for 5 minutes before turning onto a wire rack to cool.

    This was so nice and moist! Loved the addition of vanilla yogurt!!! Missed nuts, next time will add some.  -  19 May 2013
