Basic Sauce: Dissolve the sugar in the orange juice in a medium saucepan over medium heat. Stir in the cranberries then cook until they start to pop (about 10 minutes). Remove from heat and transfer to a bowl. Cranberry sauce will thicken as it cools.
Pear-Honey Cranberry Sauce: Peel, core and dice the pears. After the cranberries have been simmered, add the pears, honey and cinnamon sticks and simmer a further 10 minutes.
Brandied Cranberry Sauce: To either the basic cranberry sauce or the pear-honey cranberry sauce add the brandy and allow to cool.
