Three Kinds of Cranberry Sauce

    The tart flavour of cranberries is the perfect accompaniment to meats. Watch this recipe video to see 3 different ways to make this cranberry sauce!

    Serves: 12 

    • 200g caster sugar
    • 1 cup (250ml) orange juice or water
    • 350g fresh cranberries
    • Optional
    • 2 pears
    • 100g honey
    • 2 cinnamon sticks
    • 1-5 tablespoons brandy

    Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Basic Sauce: Dissolve the sugar in the orange juice in a medium saucepan over medium heat. Stir in the cranberries then cook until they start to pop (about 10 minutes). Remove from heat and transfer to a bowl. Cranberry sauce will thicken as it cools.
    2. Pear-Honey Cranberry Sauce: Peel, core and dice the pears. After the cranberries have been simmered, add the pears, honey and cinnamon sticks and simmer a further 10 minutes.
    3. Brandied Cranberry Sauce: To either the basic cranberry sauce or the pear-honey cranberry sauce add the brandy and allow to cool.

    I needed to try this recipe before serving it to 28 guests this Thanksgiving. 1st, I made this recipe exactly as specified. I did see the words.. "simmer until cranberries pop" and decided to use "frying screen" over the pot. Thank goodness! LOL The recipe is marvelous as it is. Then I made it a 2nd time, using 1 bag cranberries, 1/2 cup brown and 1/2 cup of white sugar, 2/3 cup OJ and 1/4 cup of water. I couldn't justify boiling down Gran Manier, so I added 2 Tablespoons AFTER the berry mixture was done heating. LUCIOUS!!!! Remember to use a spatter screen and let the sauce set for at least 4 hours. Perfect consistancy and texture as well as flavors. YUM!  -  08 Nov 2007  (Review from Allrecipes USA and Canada)

    This was wonderful sauce. I made it especially for my Dad as he loves cranberry sauce with his turkey. Both him and my grandmother raved at how awesome it was. I did make a few changes as suggested by other reviewers: I used half white & half brown sugar, half water & half orange juice. I also put just a touch (probably less than 1/8 tsp) of cinnamon.
