Mix together 2 tblsp cornflour and 1 cup sugar. Combine with 1 cup of water and bring to boil stirring constantly. Remove from heat and add 1/3 cup of dry jelly crystals (strawberry/berry flavour.) Stir to dissolve jelly crystals and set aside to cool.
Fill pie shell with cleaned, dry, & hulled strawberries. Pour over cooled jelly mix and refrigerate until jelly is set, approx. 3 hours or more, better if left overnight. This tart is very simple if using bought pie shell but makes a big impact when served. Try other fruits with matching jelly crystals as long as it's not citrus, as this will not set if citrus is used. E.g. peaches, mango.
