Honey and Rosemary Soda Bread

1. Preheat oven to 200 degrees C.
2. Remove the rosemary from the stalk.
3. In a large bowl, mix the rosemary and coarse flour with the sifted plain flour, bicarb soda and salt.
4. Add the buttermilk and honey. Mix until you get a soft dough.
5. Turn out onto a floured surface and knead until the mixture is smooth.
6. Shape into a round loaf and cut an asterisk pattern in the top.
7. Bake on a lightly floured baking tray for 40 minutes. When it's ready, it will sound hollow when tapped on the base.
8. Let rest for ten minutes before cutting. Cover with a clean damp tea towel if a soft crust is desired.
