    This curry is simplicity itself to make and takes almost no time. Just saute onions with spices, then add the other ingredients and simmer.

    Ingredients
    Serves: 4 

    • 1 tablespoon coconut milk
    • 1 teaspoon chilli powder
    • 1 1/2 teaspoons ground coriander
    • 1 pinch ground turmeric
    • salt to taste
    • 2 teaspoons vegetable oil
    • 1 onion, chopped
    • 1 small cinnamon stick
    • 1/2 teaspoon cumin seeds
    • 4 tomatoes, chopped
    • 550g fresh pea pods, shelled

    Directions
    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. In a small bowl, mix together coconut milk, chilli powder, coriander, turmeric and salt. Set aside.
    2. In a medium frying pan, heat oil over medium heat. Add onion, cinnamon and cumin seeds, frying gently until onions are soft.
    3. Stir in tomatoes, peas and coconut milk mixture. Reduce heat and simmer until the peas are tender, about 5 minutes.

    very nice meal, I added a little more coconut milk, and a tin of italian tomatoes. definately will do again. - 05 Apr 2010
