Green Chilli Stew

    Warm yourself up from the inside out with this spicy beef stew. Packed with hearty chunks of beef and lots of jalapeno chilles, this stew is lovely year round.

    Serves: 6 

    • 30g butter
    • 750g beef, cut into chunks
    • 1 large onion, diced
    • 2 tomatoes, diced
    • 1 tablespoon paprika
    • 1 teaspoon salt
    • 1 teaspoon thyme
    • 2 cloves garlic, diced
    • 1/3 cup cider vinegar
    • 100g sliced jalapenos, to taste
    • 400g tinned kidney beans

    1. Melt butter in a large saucepan. Brown the meat. Cook onion and garlic until soft.
    2. Add the tomatoes, paprika, salt, thyme, garlic, vinegar and jalapenos. Cover and simmer for about 1 hour, stirring occasionally.
    3. Stir in the beans and their liquid then allow to simmer for an additional 15 minutes before serving.
