This apricot banana bread is loaded with dried apricots, walnuts, bananas and butter. This is great served warm or cold with a layer of butter for a snack.


Serves: 6 

  • 2 cups (250g) plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon bicarb soda
  • 1 cup (220g) sugar
  • 1/2 cup (80g) dried apricots
  • 1/2 cup (60g) chopped walnuts
  • 3/4 cup mashed ripe banana
  • 1/2 cup (125ml) milk
  • 1 egg
  • 60g butter

Preparation:20min  ›  Cook:1hour  ›  Ready in:1hour20min 

  1. Preheat oven to 180 degrees C. Grease a loaf tin or baking dish.
  2. Mix together the flour, baking powder, salt, bicarb, sugar, apricots and walnuts. In a separate bowl combine the mashed banana, milk, egg and butter. Mix well then stir into the dry mixture. Stir well to combine.
  3. Pour into a loaf tin or baking dish and bake in preheated oven until a knife inserted into the centre comes out clean, about 1 hour.

Very yummy. Didn't have dried apricot so I substituted a quarter cup of sultanas. Next day it was good thick sliced and toasted. - 04 Jun 2015


What a great recipe! So easy and delicious. I didn't have white sugar so i used 1/2c caster and 1/2c of brown sugar. Ill be making this again for sure! - 01 Jun 2015
