    This easy coleslaw recipe has cabbage, onion and green capsicum. It is smothered in a dressing made of red wine vinegar, olive oil, sugar, mustard and salt.

    Ingredients
    Serves: 6 

    • 1 head cabbage, shredded
    • 1 onion, sliced
    • 1 green capsicum, sliced
    • 1 cup red wine vinegar
    • 3/4 cup olive oil
    • 1 cup sugar
    • 1 teaspoon dry mustard
    • 1 tablespoon salt

    Directions
    Preparation:10min  ›  Extra time:1hour chilling  ›  Ready in:1hour10min 

    1. Mix all veggies together then set aside.
    2. In a saucepan combine red wine vinegar, olive oil, sugar, mustard and salt. Bring to a boil. Pour over veggies then allow to cool. Chill before serving.
