Bran and Date Muffins

Chock full of bran, these muffins are sure to give you all the fibre you need to start your morning off right. They are also loaded with chopped dates, yum.


Makes: 24 muffins

  • 3 cups (210g) bran cereal
  • 1 cup (250ml) boiling water
  • 2 eggs, lightly beaten
  • 1/2 cup (125ml) olive oil
  • 1 cup (170g) dates, diced
  • 2 1/2 cups (310g) flour
  • 1 cup (220g) sugar
  • 2 teaspoons bicarb soda
  • 1/2 teaspoon salt

  1. Mix bran and boiling water. Let it cool then mix in eggs, oil and dates. In a separate bowl mix flour, sugar, soda and salt. Mix into the bran mix then spoon into the lined muffin tins.
  2. Preheat oven to 180 degrees C. Line a muffin tray with paper baking cups.
  3. Bake in preheated oven until a knife inserted into the centre comes out clean, about 30 minutes.
