Lemon Cookies

    These easy biscuits use have lemon juice and fresh grated lemon peel. They are baked until golden brown, crisp and delicious. Great for afternoon tea.

    Makes: 12 biscuits

    • 190g butter
    • 1 cup (220g) sugar
    • 1 teaspoon vanilla essence
    • 1 1/2 tablespoons finely grated lemon peel
    • 1/4 cup lemon juice
    • 1 1/2 cup flour
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon bicarb soda

    1. Preheat oven to 190 degrees. Line a baking tray with baking paper.
    2. Cream together butter, sugar and vanilla. Add lemon juice, peel and mix until smooth. In a separate bowl mix flour, powder and soda. Mix the dry into the wet mixture then stir well to combine.
    3. Roll into balls, about a tablespoon a piece then place on prepared baking tray then bake in the preheated oven until done, about 12-14 minutes.

    this dough was way to wet and sticky to roll into balls. I ended up spreading it on a parchment lined cookie sheet, but they turned out greasy. Something is flawed with the ingredients  -  09 May 2013


    Something's not quite right with he recipe or with me. The mixture was firm but sticky. Rolled it into the balls, but it ending up spreading all over the tray and turning into one big mass. Taste is ok, though.  -  14 Dec 2017


    Biscuits turned out beautifully crisp and tasted delicious. Very lemony. I followed the recipe exactly and had no problems.  -  07 Nov 2016
