A delicious cake that is rich with brown sugar and golden syrup and white chocolate chips. Topped with a tasty toffee cream icing. This is sinfully delicious.


Serves: 8 

  • Cake
  • 200g unsalted butter, cubed
  • 200g white chocolate, in pieces
  • 200g brown sugar
  • 150g hot water
  • 50g golden syrup
  • 3 teaspoon vanilla bean paste
  • 4 eggs
  • 140g plain flour
  • 140g self raising flour
  • Toffee Cream
  • 50g unsalted butter
  • 500g cream
  • 150g brown sugar
  • 4 teaspoons vanilla extract

  1. Preheat oven to 180 degrees C. Place butter, chocolate, sugar, water, golden syrup and vanilla into bowl and mix. Add eggs one at a time. Mix in flour and stir well. Pour into a greased tin and cook for 50 minutes to an hour until set in the centre. Allow to cool before un-moulding.
  2. Toffee Cream

  3. Place butter, 100g cream, sugar and vanilla into bowl and stir well. Add remaining cream and whip together until cream holds still peaks. Either spread over cake with palette knife or serve on the side.
