These easy roast tomatoes taste great as a side dish to any meal. The are seasoned with thyme, balsamic vinegar and brown sugar then they are served with feta.


Serves: 6 

  • 1kg tomatoes, halved
  • 4 sprigs thyme, plus extra to serve
  • 2 tablespoons olive oil
  • 5 tablespoons good quality balsamic vinegar
  • 2 teaspoons brown sugar
  • 1/2 cup crumbled feta, to serve

Preparation:5min  ›  Cook:20min  ›  Ready in:25min 

  1. Preheat oven to 125 degrees C.
  2. Toss the tomatoes with the olive oil and thyme. Roast tomatoes until blistered. In a small bowl mix the balsamic vinegar and brown sugar. Pour over the roasted tomatoes and toss gently to coat.
  3. Garnish with feta cheese.

Cook's Note

I like to eat these on pasta.
