These easy roast tomatoes taste great as a side dish to any meal. The are seasoned with thyme, balsamic vinegar and brown sugar then they are served with feta.
1kg tomatoes, halved
4 sprigs thyme, plus extra to serve
2 tablespoons olive oil
5 tablespoons good quality balsamic vinegar
2 teaspoons brown sugar
1/2 cup crumbled feta, to serve
- Preheat oven to 125 degrees C.
- Toss the tomatoes with the olive oil and thyme. Roast tomatoes until blistered. In a small bowl mix the balsamic vinegar and brown sugar. Pour over the roasted tomatoes and toss gently to coat.
- Garnish with feta cheese.
I like to eat these on pasta.
