Lime and Ricotta Syrup Cake

    This delicious cake is baked with lime zest to give it flavour and ricotta to keep it moist, then it is drizzled with a sweet lime syrup to serve. Delicious.

    Serves: 8 

    • Cake
    • 200g butter, softened
    • 1 tablespoon finely grated lime rind
    • 1 cup (220g) caster sugar
    • 3 eggs, separated
    • 250g ricotta cheese
    • 1/2 cup (125ml) milk
    • 1 1/2 cup (190g) self raising flour
    • Lime Syrup
    • 1/3 cup (80ml) lime juice
    • 1/4 cup (60ml) water
    • 2/3 cup (150g) caster sugar

    1. Preheat oven to 180 degrees C. Grease a baba tin with melted butter.
    2. Beat butter, rind and sugar until light and fluffy. Beat in egg yolks, cheese and milk. Stir in sifted flour. Beat egg whites until stiff peaks form then fold into the cake in two batches. Spread into the tin then bake for about 1 hour. Let cake stand about 5 minutes before turning onto a wire rack.
    3. Lime Syrup

    4. Stir lime juice, water and sugar in a small saucepan over low heat until sugar dissolves; bring to a boil. Boil uncovered for 2 minutes or until syrup thickens slightly. Pour hot syrup over the cake.
