    This fun soup is perfect for the the little ones, as it has pasta shapes in it. Uses tinned tomatoes, stock powder and some sneaky veggies, like celery and lentils.

    Serves: 6 

    • 100g dry pasta shapes (abc's or stars)
    • 5 cups water
    • ` 1 medium onion, diced
    • 2 teaspoons chicken stock powder
    • 2 teaspoons crushed garlic
    • 1 carrot, diced
    • 1 celery stalk, diced
    • 2 spring onions, diced
    • 1/2 teaspoon crushed peppercorns
    • 1/2 cup lentils
    • 400g tinned tomatoes
    • 10 cherry tomatoes, quartered
    • 2 tablespoon tomato paste
    • 1 tablespoon brown sugar
    • 375ml evaporated milk

    Preparation:15min  ›  Cook:45min  ›  Ready in:1hour 

    1. Cook pasta according to packet directions then drain and set aside.
    2. In a large saucepan or stockpot cook the water, onion, stock powder, garlic, carrot, celery, spring onions, peppercorn, lentils, tinned tomatoes, cherry tomatoes, tomato paste and brown sugar. Simmer until lentils are soft, about 45 minutes.
    3. Remove from heat and blend with a stick blender. Return to heat then stir in the evaporated milk and pasta shapes. Reheat then serve.
