Bean and Beef Tacos

    These tacos have a bit more mild of a flavour as they do not use any taco spices. Seasoned with fresh garlic, onions and red chillies, they still have a bit of a kick.

    Makes: 8 tacos

    • 1 teaspoon olive oil
    • 1 small onion, diced
    • 2 teaspoon garlic, crushed
    • 2 red chillies, diced
    • 2 eschalots, diced
    • 300g premium beef mince
    • 400g tinned kidney beans, drained
    • 1 cup frozen corn
    • 1/2 cup water
    • 8 regular taco shells
    • 1/2 cup grated cheese
    • 2 cups cos lettuce
    • 12 cherry tomatoes, quartered

    1. Heat olive oil in a frying pan. Stir in onion, garlic, chillies and eschalots. Stir fry until onion begins to soften. Stir in the beef mince, breaking it up and stirring with a spatula, until it is browned. Stir in the beans and the corn and about 1/2 cup of extra water. Continue to cook until the meat is cooked through and no longer pink.
    2. Heat taco shells in the oven according to directions then stuff with the taco meat, cheese, lettuce and tomatoes.
