This is an easy and tasty way to use up any leftover salmon you have, served on rye bread with onions and mayonnaise.

Makes: 2 sammies

  • 4 slices rye bread, toasted
  • 2 fillets cooked salmon
  • 1 tablespoon olive oil
  • 1/2 onion, sliced
  • 4 tablespoons mayonnaise
  • cayenne pepper, to taste
  • 4 cos lettuce leaves
  • 4 slices tomato

Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

  1. Toast the bread and reheat the salmon. In a frying pan, saute the onions. Mix together the mayonnaise and cayenne pepper. Spread the mayonnaise over the bread, top with the salmon, sauteed onions, lettuce and tomatoes. Enjoy.
