Strawberry Rhubarb Muffins

    These tasty strawberry rhubarb muffins make a scrumptious breakfast, tasty lunch box treat or afternoon tea. Vanilla yoghurt is the trick to keeping these nice and moist.

    Makes: 12 muffins

    • 1 cup (125g) self raising flour
    • 1 1/2 tablespoons brown sugar
    • 1 egg, beaten
    • 2 tablespoons milk
    • 100g vanilla yoghurt
    • 1 teaspoon vegetable oil
    • 1 teaspoon vanilla essence
    • 1/3 cup strawberries, diced and stems removed
    • 1/3 cup rhubarb, diced
    • 1/4 cup walnuts

    1. Preheat oven to 180 degrees C. Grease or line a muffin tin.
    2. Sift together flour and sugar. Beat together the egg, milk, yoghurt, vegetable oil and vanilla. Pour into the dry ingredients. Fold in the berries, rhubarb and the nuts.
    3. Pour into prepared muffin tin then bake in preheated oven until a knife inserted into the centre comes out clean, about 20 minutes.

    I always like to add twice as much fruit as requested in a recipe because I like it fruity. That may be why it didn’t rise as much as it could have. However, the flavor was wonderful and this recipe makes an enjoyable muffin.  -  29 May 2014
