    Tasty savoury muffins baked with capsicum, pumpkin, frozen corn and feta cheese. These delightful treats are great for breakfast or stuffed into your families lunch boxes.

    Ingredients
    Makes: 12 muffins

    • 1 1/2 cups (210g) self raising flour
    • 1 teaspoon baking powder
    • 1 1/2 tablespoons sugar
    • 1/2 cup capsicum
    • 1/3 cup mashed pumpkin
    • 1/2 cup frozen corn
    • 2 eggs, beaten
    • 3/4 cup milk
    • 1/2 cup feta cheese

    1. Preheat oven to 180 degrees C. Grease or line a muffin tray.
    2. Sift together flour and baking powder then add sugar. Add capsicum, pumpkin and corn. Mix together the milk and eggs. Combine dry and wet ingredients then fold in the cheese.
    3. Pour into the greased muffin tins then bake in preheated oven until a knife inserted in the centre comes out clean, about 20 minutes.
