    A spicy chili made using a slow cooker with loads of flavor, beans and veggies.

    Ingredients
    Serves: 4 

    • 4 sticks of celery diced
    • 2 medium carrots diced
    • 2 large onions diced
    • 1 red capsicum diced
    • 2 long red chilies diced
    • 3 tablespoons ground cumin
    • 2 tablespoons paprika
    • 1 tablespoon chili powder
    • 2 400g diced tomato tins
    • 1 cup beef stock
    • 2 teaspoons brown sugar
    • 4 tablespoons tomato paste
    • 1 bay leaf
    • 2 sprigs of thyme
    • 1 400g tin of red kidney beans
    • salt and pepper to taste
    • 800g lean beef mince
    • 3 cloves garlic crushed
    • white rice
    • grated cheese
    • corn chips

    Directions

    1. Put a large pan on the stove at medium heat.
    2. Add celery, carrots, onion and cook for a few minutes.
    3. Add mince beef and cook until brown.
    4. Transfer the cooked mince and veggies into a slow cooker and add all the other ingredients, mix well.
    5. Cook on low for 7 to 8 hours.
    6. Serve over white rice with grated cheese on top and corn chips on the side.

    Tip

    You can put leftovers in plastic containers and freeze the for an easy to prepare meal in the future.
