Easy Chilli Con Carne "Favourite"

Chilli con carne in just 30 min.

Serves: 4 

  • 1 tablespoon olive oil
  • 1 medium onion (diced)
  • 500g premium beef mince
  • 2 level teaspoons minced chilli or 1 fresh chilli with seeds (no seeds for mild)
  • 3 level teaspoons minced garlic
  • 440g of condensed tomato soup or (440g tomato soup and 2 tb tomato paste)
  • 300g tin of kidney beans
  • 1 medium green capsicum (diced)
  • 1 teaspoon cayenne pepper (optional, for extra heat)
  • 1 cup rice (white or brown)

Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

  1. Pre-heat oil and fry onions till transparent then remove from pan.
  2. Add mince, chilli and garlic to the frypan on medium to high heat continually chopping mince to reduce the size (finer the better).
  3. Boil water for the rice then add when boiling (stir frequently).
  4. Reduce heat on pan after mince has browned.
  5. Pour tomato soup/paste into pan and stir through.
  6. Add fried onions, kidney beans and capsicum stirring through. Cover the pan and reduce the heat (be careful not burn the bottom).
  7. Taste and add additional cayenne pepper as required for heat.
  8. After 10 minutes remove cover to reduce liquid slightly.
  9. Strain rice with a colander.
  10. Place both rice and chilli con carne into separate serving dishes ready to serve.


To assist with flavour cook 1-2 hours prior then re-heat prior to serving - just be aware the heat will intensify.

Great easy basic recipe with most ingredients already in the pantry. I swapped tinned tomato's for the tomato soup and added 4 teaspoons of tomato paste. I also added a small tin of sweet corn instead of the capsicum. - 24 Jul 2016
