Heat olive oil in a frying pan. Saute the celery for a few minutes then add the onion. Saute until they being to soften then stir in the garlic and cranberries then satue a minute more. Transfer to a large bowl and add the matzo.
In another bowl add salt, pepper, paprika, parsley, eggs, stock and water. Mix until well combined then stir in the matzo mixture. Pour into a greased baking dish then bake in preheated oven for about 30 minutes.
