Easy Christmas Parfait

    This a quick and easy parfait using balsamic strawberries, vanilla frozen yoghurt and puff pastry strips. It looks really fancy and works really well following a heavy Christmas meal.

    Makes: 8 parfaits

    • Half a cup of good balsamic vinegar
    • 1/4 cup caster sugar
    • 2 punnets of strawberries, washed, steams and leaves removed
    • 1 sheet of puff pastry, thawed
    • 2 egg yolks, beaten
    • 400g vanilla or strawberry frozen yoghurt

    1. Combine balsamic vinegar and caster sugar in a medium bowl.
    2. Cut stawberries into quarters lengthways. Add to balsamic vinegar and stir. Set aside, stiring every 5 minutes.
    3. Preheat oven to 200 Degrees C. Line two baking trays with baking paper.
    4. On a clean working surface lay out the puff pastry sheet. Cut in half. Cut 8 long triangles out of each piece. Brush with egg yolks and transfer to baking trays with at least 3cm between each strip. Bake for 10 minutes or until golden and fully puffed up. Remove from oven, cool and remove from baking paper with a spatula. Set aside.
    5. Spoon 1 tablespoon of strawberries and a little syrup into the bottom of each glass. Add two scoops of frozen yoghurt, top with one more tablespoon of strawberries and finish with two pieces of puff pastry. Serve.
