Set oven to 200 Degrees C and line two trays with baking paper.
In a medium bowl combine goats cheese and fruit mince meat until combined. Set aside.
On a clean surface spread out puff pastry and cut out 16 Christmas tree shapes. Brush egg yolk onto trees using a pastry brush. Place trees onto trays with at least 3cm between each tree. Thinly smear about 1/2 teaspoon of goats cheese mixture on the centre of each tree.
Bake in preheated oven for 10-12 minutes or until pastry is golden brown. Let them sit on trays for 2-3 minutes then use a spatula to remove pastries from baking paper. Serve.
