Christmas Tree Pastries

    These quick and easy pastries are a fantastic snack to cook up and serve to breakfast guests. They're also a favourite with kids because of their festive christmas tree shape.

    Makes: 16 pastries

    • 7 cm high Christmas tree cookie cutter (or similar size)
    • 150g goats cheese
    • 1/2 cup fruit mince meat
    • 2 sheet puff pastry, thawed
    • 2 egg yolks, beaten

    1. Set oven to 200 Degrees C and line two trays with baking paper.
    2. In a medium bowl combine goats cheese and fruit mince meat until combined. Set aside.
    3. On a clean surface spread out puff pastry and cut out 16 Christmas tree shapes. Brush egg yolk onto trees using a pastry brush. Place trees onto trays with at least 3cm between each tree. Thinly smear about 1/2 teaspoon of goats cheese mixture on the centre of each tree.
    4. Bake in preheated oven for 10-12 minutes or until pastry is golden brown. Let them sit on trays for 2-3 minutes then use a spatula to remove pastries from baking paper. Serve.
