Christmas No Bake Cheesecakes with Fruit Mince Topping

    This is a simple festive cheesecake that only requires 7 minutes of cooking on a hot summer day! It's topped with pre-made fruit mince meat and can be prepared in advance.

    Makes: 8 mini cheesecakes

    • Digestive Biscuit Crust
    • 1 1/2 cups finely ground digestive biscuits
    • 1/3 cup white sugar
    • 6 tablespoons butter, melted
    • 1/4 teaspoon ground nutmeg
    • Cheesecake Filling
    • 375g cream cheese, softened
    • 6 tablespoons icing sugar
    • 1/3 cup whipped cream
    • 1/2 cup of fruit mince meat

    1. Digestive Biscuit Crust: Line a 12 hole muffin tin with paper patty cases. Mix biscuit crumbs, sugar and melted butter until well blended. Press about 1/4 cup of mixture onto the bottom and sides of each patty case inside muffin tin holes. Bake at 190 degrees C for 7 minutes. Cool.
    2. Cheesecake Filling: Whisk together the cream cheese and sugar in a small bowl until smooth. Fold whipped cream into the cream cheese mixture. Spoon about 2 tablespoons of the cream cheese mixture into each crust. Refrigerate for 1 hour.
    3. Remove from fridge and top with 1 teaspoon of pre-made fruit mince meat. Serve.
