Digestive Biscuit Crust: Line a 12 hole muffin tin with paper patty cases. Mix biscuit crumbs, sugar and melted butter until well blended. Press about 1/4 cup of mixture onto the bottom and sides of each patty case inside muffin tin holes. Bake at 190 degrees C for 7 minutes. Cool.
Cheesecake Filling: Whisk together the cream cheese and sugar in a small bowl until smooth. Fold whipped cream into the cream cheese mixture. Spoon about 2 tablespoons of the cream cheese mixture into each crust. Refrigerate for 1 hour.
Remove from fridge and top with 1 teaspoon of pre-made fruit mince meat. Serve.
