    I love this vegan sandwich filling which combines tofu, tahini and miso with vegetables. Also great on toasted bagels.

    Serves: 6 

    • 500g firm tofu
    • 4 tablespoons brown miso
    • 5 tablespoons tahini
    • 1/2 onion, minced
    • 1/2 carrot, minced
    • 3 tablespoons unsalted sunflower seeds

    Preparation:5min  ›  Extra time:30min resting  ›  Ready in:35min 

    1. Press tofu to remove excess water: Place tofu on a flat surface. Cover with a cutting board and place a cast iron frying pan or a similarly heavy object on top. Allow it to sit for about 30 minutes.
    2. Crumble tofu into a medium bowl. Mix in remaining ingredients. Refrigerate until serving.
