These simple meringues are so easy to make and so delicious for a treat during Passover or any time of year. You can also serve with whipped cream and fresh fruit.

Makes: 20 meringues

  • 3 egg whites
  • 1/8 teaspoon white vinegar
  • 1/2 cup (110g) sugar
  • 1/2 teaspoon vanilla essence
  • 1/4 teaspoon cream tartar

  1. Preheat oven to 140 degrees C. Lightly spray a baking tray with cooking spray or line with baking paper.
  2. Combine egg whites and vinegar in a clean metal bowl. Beat to a stiff foam then add the sugar, a few tablespoons at a time, beating in between. Add cream of tartar and vanilla then quickly beat in.
  3. Spoon the mixture into a piping bag then pipe onto the baking tray into small biscuits. (If you do not have a piping bag, just dollop it onto the baking tray).
  4. Bake in preheated oven for 45 minutes to an hour. Allow to cool fully before eating. Serve with whipped cream and fresh fruit.
