These simple meringues are so easy to make and so delicious for a treat during Passover or any time of year. You can also serve with whipped cream and fresh fruit.
Makes: 20 meringues
3 egg whites
1/8 teaspoon white vinegar
1/2 cup (110g) sugar
1/2 teaspoon vanilla essence
1/4 teaspoon cream tartar
- Preheat oven to 140 degrees C. Lightly spray a baking tray with cooking spray or line with baking paper.
- Combine egg whites and vinegar in a clean metal bowl. Beat to a stiff foam then add the sugar, a few tablespoons at a time, beating in between. Add cream of tartar and vanilla then quickly beat in.
- Spoon the mixture into a piping bag then pipe onto the baking tray into small biscuits. (If you do not have a piping bag, just dollop it onto the baking tray).
- Bake in preheated oven for 45 minutes to an hour. Allow to cool fully before eating. Serve with whipped cream and fresh fruit.
