Easy Cream Cake

This cream cake is nice and light. It is so simple and uses just one egg, cream, sugar and flour. It is topped with a mixture of sugar and mixed spice.

- 1 egg
- 1 cup (250g) cream
- 1/2 cup (110g) sugar
- 1 cup (130g) self raising flour
- 1/4 cup sugar
- 1 teaspoon mixed spice

- Preheat oven to 180 degrees C.
- Combine egg, cream, sugar and flour. Pour onto a greased pie tin then sprinkle with mixture of mixed spice and sugar.
- Bake in preheated oven until a knife inserted in the centre comes out clean, 20-30 minutes.
