    This cream cake is nice and light. It is so simple and uses just one egg, cream, sugar and flour. It is topped with a mixture of sugar and mixed spice.

    Makes: 1 cake

    • 1 egg
    • 1 cup (250g) cream
    • 1/2 cup (110g) sugar
    • 1 cup (130g) self raising flour
    • 1/4 cup sugar
    • 1 teaspoon mixed spice

    1. Preheat oven to 180 degrees C.
    2. Combine egg, cream, sugar and flour. Pour onto a greased pie tin then sprinkle with mixture of mixed spice and sugar.
    3. Bake in preheated oven until a knife inserted in the centre comes out clean, 20-30 minutes.
