Coconut Bran Meringue Biscuits

Sweet buttery bran biscuits chock full of coconut are then topped with meringue icing and an almond then baked until crisp. What a scrumptious treat.

The Walters

Makes: 16 

  • 90g butter
  • 1 cup (130g) self raising flour
  • pinch of salt
  • 1/4 cup (60g) sugar
  • 1/4 cup (20g) cocount
  • 90g bran
  • 2 teaspoons water
  • 1 egg, separated
  • 1/4 cup icing sugar
  • 16 almond halves

  1. Preheat oven to 160 degrees C.
  2. Rub butter into flour and salt. Add sugar, coconut and bran. Mix to a very dry paste with water and egg yolk. Roll into a log then cut into shapes.
  3. In a bowl, beat the egg white until fluffy and stiff. Beat in the sugar. Spread over the top of each bran biscuit, top with half an almond then bake on a greased baking tray about 15-20 minutes.
