Belgium biscuits are a favourite for kids and adults alike. Filled with raspberry jam then topped with a sweet icing, what a delightful biscuit.

The Walters

Makes: 12 biscuits

  • 1 cup self raising flour
  • 1 egg
  • 1 cup sugar
  • 1 cup cornflour
  • 250g butter
  • 1/4 cup milk
  • 1 tablespoon treacle, warmed
  • nutmeg and cinnamon, to taste
  • 1/2 cup raspberry jam
  • Icing
  • 1 cup icing sugar
  • 1 tablespoon milk
  • 1 teaspoon butter

Preparation:25min  ›  Cook:15min  ›  Ready in:40min 

  1. Preheat oven to 180 degrees C.
  2. Beat butter and sugar to a cream. Add egg, milk, treacle then dry ingredients. Roll out dough and cut circles with biscuit cutters. Bake in preheated oven until golden brown, about 13 minutes. Allow to cool on a cooling rack.
  3. In a bowl combine the icing ingredients until well mixed.
  4. Spread a layer of jam between two biscuits then top with icing.
