A mouth watering pie in shortcrust pastry with rhubarb, raisins, sugar and a hint of lemon. Baked until golden brown and delicious. Enjoy warm with ice cream or cream.

Makes: 1 pie

  • 2 sheets shortcrust pastry
  • 1 cup rhubarb, peeled and diced
  • 1 cup raisins
  • 1 cup sugar
  • 1 lemon, juiced and zested
  • 1 egg

Preparation:30min  ›  Cook:30min  ›  Ready in:1hour 

  1. Preheat oven to 180 degrees C. Grease and line a pie tin with one sheet of shortcrust pastry.
  2. Cover rhubarb with boiling water, stand for 5 minutes then drain. Mix rhubarb and raisins then add other ingredients. Pour into prepared pastry shell, cover with the other sheet of shortcrust and bake in preheated oven until golden brown, about 30 minutes.
