A good and simple Italian soup with healthy vegetables including iron containing spinach.

Serves: 2 

  • 1 tbs olive oil
  • 1 medium potato diced into 5mm cubes
  • 1 celery stick cut into 5mm pieces
  • 1 medium onion finely diced
  • 3 crushed garlic cloves
  • good handful of English spinach finely shredded
  • 2 cups vegetable stock
  • 4 snake beans cut into 5mm pieces
  • 1 cup of small pasta
  • To serve: 2 slices of toast

Preparation:20min  ›  Cook:30min  ›  Ready in:50min 

  1. First cook the diced potato until they are al dente, about 15 minutes.
  2. Cook the all the vegetables in the vegetable stock.
  3. In a separate saucepan cook the small pasta until al dente then drain.
  4. Combine all cooked ingredients then serve with toast.
