Tasty jam made from dried apricots, pineapple, almonds and lemon juice. This tastes great on scones, toast, pikelets and any other place you can think to use it.

The Walters

Makes: 3 kg

  • 1 1/2 kg apricots
  • 1 kg tinned pineapple
  • 9 cups boiling water
  • 6 cups sugar
  • 130g almonds, blanched and cut into slivers
  • 1/4 lemon, juiced

  1. Wash apricots and pineapple in warm water. Pour the boiling water over the apricot and allow to sit overnight. Cut pineapple into quarters and add the pineapple juice to the apricots and simmer until tender, stirring frequently. Add sugar and cook 10 minutes. Add lemon juice and almonds. Cook 5 minutes longer then bottle and seal when cold.
