Oatmeal Cranberry Christmas Cookies

    These simple cookies are a lovely addition to a christmas morning tea or afternoon snack. Try adding broken up white chocolate to make them really decadent!

    Makes: 36 cookies

    • 160g butter
    • 2/3 cup (75g) brown sugar
    • 2 large eggs
    • 1 1/2 cups traditional rolled oats
    • 1 1/2 cups flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 1/4 cups sweetened, dried cranberries

    1. Preheat oven to 190 Degrees C.
    2. In a large bowl beat butter and sugar together until light and fluffy. Add eggs and mix well.
    3. In a medium bowl combine oats, flour, baking soda and salt then add to butter mixture one cup at a time. Stir in dried cranberries and then drop rounded teaspoonfuls onto ungreased baking trays. Bake for 10-12 minutes or until golden brown. Cool on wire cake racks.
