Potato And Aubergine Curry (Eggplant)

Nice simple curry to make. It was my first aubergine curry that I cooked and it goes down a storm in our house.

Serves: 4 

  • 1 large aubergine cut into strips
  • 1 onion finely chopped
  • 4 cloves of garlic chopped
  • small piece of ginger chopped
  • 3 - 4 potatoes peeled and chopped
  • 4 dry chillies or 2 small fresh chillies
  • 4 teaspoons of sugar
  • 1 teaspoon of cumin seeds
  • 1 handful of coriander chopped

Preparation:15min  ›  Cook:40min  ›  Ready in:55min 

  1. Heat oil in pan and fry onions, garlic and ginger until the onions are translucent. Do not let them brown.
  2. Add aubergine, chopped coriander and potatoes.
  3. Add 4 dry chillies or 2 small fresh chillies and add one cup of water.
  4. Put in cumin seeds and add 4 teaspoons of sugar.
  5. Leave potatoes to boil for around 30 minutes or until they are soft and water is evaporated.
  6. Serve with rice.
