20 red and yellow cherry tomatoes - one red tomato set aside
1/2 red onion, thinly sliced
1 tablespoon olive oil
200g crumbled goats cheese
salt and pepper, to taste
1/4 firm avocado, thinly sliced

Preheat oven to 180 Degrees C.
Cook pasta as per the instructions on the packet. Drain and set aside to cool.
In a large bowl coat cherry tomatoes with olive oil and salt and pepper. Transfer tomatoes to a baking tray and roast for approximately 10 minutes until skin starts to split. Remove from oven and cool on tray. Using the large bowl again, combine capsicum, chopped avocado, red onion and goats cheese. Add tomatoes and pasta when they're cooled. Add salt and pepper to taste. Top with avocado slices and halved fresh cherry tomato to resemble holly berries and leaves. Serve.
