Kosher for Passover Apple Slice

    Apple slice that it perfect during the Passover holiday as it uses matzo meal, eggs and fresh apples. Seasoned with lemon zest, cinnamon and a small pinch of salt.

    Serves: 9 

    • 1 cup (130g) matzo meal
    • 1 cup (200g) cinnamon sugar
    • 1/2 teaspoon salt
    • 3 eggs, separated, whites beaten stiffly
    • 1/2 cup (125ml) peanut oil
    • 1 lemon, zested and juiced
    • 2 apples, peeled, cored and sliced

    1. Preheat an oven to 190 degrees C Grease a square cake tin.
    2. Combine matzo meal, cinnamon sugar and salt in a large bowl. Beat in egg yolks, peanut oil, lemon juice and lemon zest. Fold in the egg whites. Pour half of the batter into the prepared tin. Cover the batter with apple slices then pour the remaining batter on top.
    3. Bake in the preheated oven until a toothpick inserted into the centre comes out clean, about 45 minutes. Cool in the tins for 10 minutes before removing to cool completely on a wire rack.

    Peanut Oil

    My tradition allows peanut oil on Passover, if yours does not then you can use vegetable oil instead.
