Mini Cherry and Chocolate Cheesecakes

    These pretty little treats are quick and easy to make. They’re a great finger food for cocktail parties at Christmas. Drizzling melted chocolate on top also works well.

    Makes: 24 Mini Cheesecakes

    • 375g cream cheese, softened
    • 6 tablespoons icing sugar
    • 1/3 cup whipped cream
    • 1/2 teaspoon rum
    • 2 packets of frozen mini pastry shells/cups (24 individual shells/cups)
    • 6 red and 6 green glace cherries, halved
    • 1 block of chocolate for shaving or drizzling

    1. Stir the cream cheese and sugar in a small bowl with a whisk until smooth. Fold whipped cream and rum into the cream cheese mixture. Refrigerate for 1 hour.
    2. Remove pastry shells. Spoon about 1 teaspoon of the cream cheese mixture into each crust. Top with cherry halves and either shave chocolate over the top or melt and drizzle chocolate in a zigzag pattern.
