Mini Christmas Cheesecake with Fig

    Makes: 12 Mini Cheesecakes

    • Cheesecake Crust
    • 1 1/2 cups finely ground digestive biscuits
    • 1/3 cup white sugar
    • 6 tablespoons butter, melted
    • 1/4 teaspoon ground nutmeg
    • 1/4 teaspoon cinnamon
    • 1/8 teaspoon cloves
    • Cheesecake Filling
    • 375g cream cheese, softened
    • 6 tablespoons icing sugar
    • 1/3 cup whipped cream
    • 1/2 teaspoon rum
    • 3 figs, sliced longways into quarters
    • 8 small mint leaves

    1. Cheesecake Crust: Preheat oven to 190 Degrees C. Line a 12 hole muffin tin with paper patty cases.
    2. Mix biscuit crumbs, sugar, melted butter and spices until well blended. Press about 1/4 cup of mixture onto the bottom and sides of each patty case inside muffin tin holes. Bake at 190 degrees C for 7 minutes. Cool.
    3. Cheesecake Filling: Stir the cream cheese and sugar in a small bowl with a whisk until smooth. Fold whipped cream and rum into the cream cheese mixture. Spoon about 2 tablespoons of the cream cheese mixture into each crust. Top with the a slice of fig and a mint leaf. Refrigerate for 1 hour before serving.
